Chickpea Burgers and Cucumber Salad with Greek Yoghurt – Mint Sauce.

I’m not a vegetarian, but I also love to cook without meat. Hummus is one of my great loves, but because of the amount of garlic it’s not always handy to eat. That’s why I used the main ingredient of hummus (chickpeas) to cook up something different, a (mini) burger. Combined with a fresh cucumber salad it is tha BOMB! If eaten for dinner I would replace the small cucumber salad for a bigger vegetable side dish and/or brown rice.


Chickpea (Mini)Burgers

Ingredients (for 2 persons)
  • 190 grams chickpeas
  • 1 egg
  • Tsp caraway (karwijzaad for the Dutch people among us)
  • 3 sticks of cilantro
  • 1/4 lime
  • 1/2 small red pepper
  • 1/2 onion or 1 small onion
  • 1 clove garlic
  • Salt
  • Flour
Instructions

Toast the caraway in a dry frying pan. Slice and dice the onion and red pepper very small. Squeeze the clove of garlic with a garlic press. Fry the onion, pepper and garlic in the frying pan with a small amount of olive oil (By now, you should have removed the caraway from the pan). Slice the cilantro in small pieces. Squash the chickpeas, cilantro and lime juice in a bowl with a fork or put all the ingredients in a food processor (I chose this option, because it is a lot faster and easier). Combine all the ingredients in a bowl and mix in the egg. With your hands form 4 burgers or 6 small ones. Put some flour on the burgers on both sides. Heat some butter in the frying pan and cook your burgers. They must be cooked all the way through! Burgers are ready when they are browned on both sides.


Cucumber salad with Greek yoghurt-mint sauce

Ingredients
  • 1/2 cucumber
  • Tbsp lime juice
  • 100 grams of greek yoghurt
  • 2 sticks of mint
  • 2 sticks of cilantro
  • Tbsp parsley
  • Salt
  • Pepper
  • Optional: a small hand of chickpeas and a few slices of fresh red pepper
 Instructions

Slice half of a cucumber in thin slices and put them in a bowl. In a separate bowl put the greek yoghurt, lime juice, finely chopped mint, parsley and cilantro. Stir the ingredients together with a spoon and use some salt and pepper to taste. Serve in separate bowls to use the sauce for both the cucumber salad and for the burgers.
