Simple Greek Salad

And then it was SUMMER!!  I am not used to these high temperatures here in the Netherlands. The idea of eating hot meals in the evening is not appealing.. My mind is set on cooling down; cold drinks, ice cubes, ice cream and salads! Oh yes..and simple.. very simple.. Making dinner should not take too much energy because with every step I’m breaking a sweat. This Greek salad is perfect, trust me 🙂


Ingredients (1 person):
  • 1/3 cucumber
  • 1 big tomato
  • 1/2 small red onion
  • 30 grams of feta cheese
  • 1 or 2 Tbsp of green and black olives
  • 1 Tbsp greek yoghurt
  • Squeeze of fresh lemon juice
  • Seasoning to taste (parsley, za’atar, pepper, salt)

Instructions:

Slice and dice the cucumber, tomato, onion and feta. Add the greek yoghurt, lemon juice and the seasoning. Let the salad rest in the fridge for at least an hour to optimize the flavor. Take it out of the refrigerator (very important! 😉 ) ….aaaaand Enjoy! 🙂
