Summer Gamba’s with Arugula Pasta

Now that I’ve rested from our vacation to the Czech Republic I thought it was time to share a delicious recipe with you. Yesterday, my BFF Elsje and I were catching up and with that we needed some great food of course. This dish is delicious and super easy. It was seriously done in 20 minutes, so for all you gamba lovers out there..Try it!

Ingredients ( for 2 persons)

  • 250gr pealed gamba’s
  • 250gr fresh pasta
  • 2 scallions
  • 75gr aragula
  • 4 tbsp butter
  • 2 cloves of garlic
  • 1 tsp oregano
  • 2-3 tbsp grated parmesan cheese
  • 2 tbsp fresh parsley
  • Pepper & salt

How (+/- 20min)

Scatter some pepper and salt on the gamba’s and set aside. Slice the scallions in small rings and push the garlic through a garlic press. Put the sliced fresh parsley in a small bowl. Boil water for the pasta. Heat up 2 tbsp butter in a skillet. Fry the scallions, garlic and oregano for 2-3 minutes. When the water is boiling you can add the pasta. Beware that fresh pasta is already done in 2-3 minutes! Add the gamba’s to the scallion mixture and fry them until pink. In another skillet heat up 2 tbsp butter and drain the pasta. Add the pasta to the heated butter with the arugula and parmesan cheese for 2-3 minutes. Divide the arugula pasta and gamba’s on two plates, scatter some fresh parsley on the dish and…
