A while ago my colleague gave me her leftover quinoa because she didn’t like it much. I find it delicious but hadn’t gotten around into using it until today. With some weekend leftovers I created this delicious dish. Daniel (my boyfriend) and I enjoyed it a lot while watching a brand new episode of “the Walking Dead”.
Ingredients (for 2 people):
- 150 – 200 grams uncooked quinoa
- 300 grams fresh spinach
- 100 grams salami (Leave it out for a vegetarian meal and replace it with a red paprika and a red pepper to make it spicy!)
- 1 onion
- 1 garlic clove
- 1 slice of ginger (same amount as the garlic when sliced and diced)
- Parmesan cheese
- Salt & Pepper
- Olive oil
Cook the quinoa according to the instructions on the package. This will take around 20 minutes. In the meantime you can prepare the rest. Slice and dice the onion, garlic and ginger. Heat up the olive oil in a wok and brown the sliced and diced ingredients. Add some salt and pepper to taste. Dice the salami and add to the onion mixture in the wok. After 2-3 minutes you add the spinach carefully. Every time the spinach slims down you can add some more until the bag is empty. Strain the quinoa and add to the spinach mixture. Divide the amount over two dishes, sprinkle some (fresh) parmesan cheese on top aaaaaaand….
