Buckwheat Wrap with Hummus

Tomorrow is almost here and I’m so excited to start my new job! Although I’m excited for this new experience, I’m extremely enjoying my free & lazy Sunday. This lazy lunch is exactly what I needed. It doesn’t take much time to prepare and is also healthy!

– 40 grams of buckwheat flour 
– 100 ml water
– hummus
– hand of iceberg lettuce
– 3 cherry tomatoes in thin slices 
– 1 tbsp of grated cheese
– 1/2 tsp za’atar (jonnie boer)
– pepper & zout salt to taste
– 1 tsp olive oil

Weigh 40 grams of buckwheat flour and mix it with the 100 ml of water. Mix the ingredients with a fork until it is smooth. Add some salt and pepper to the mixture. Heat up the tsp of olive oil in the frying pan. Stir the buckwheat mixture again and pour it in the pan. In the meantime slice the cherry tomatoes in thin slices. Turn the wrap around when small air bubbles appear. Let it sit in the pan for another 2 minutes and put the wrap on a plate. Smear the hummus on the wrap and scatter the grated cheese over it. Lay the slices of cherry tomatoes on top, followed by the lettuce. Sprinkle the za’atar on top, roll it and dig in!
